Black Bean Succotash With Portobello Mushrooms

Since Monday was a holiday — and we just may have overdone it a tad during the weekend’s festivities! — we’ll be keeping things light and healthy tonight by whipping up a delicious, easy, and out-of-the-box meatless meal for dinner. This succotash (a corn and bean dish) features not only fiber- and protein-rich black beans, but hominy — large corn kernels that are a tad puffy and chewy and have a very unique flavor. Smoky-flavored grilled mushrooms are an ideal finishing touch to this yummy Southern-style dish, just perfect for warm summer nights. Bonus: It also makes great leftovers.
